As with any city, there are two good ways to see the charms of modern day Athens. The first is to get out and just start walking. The second is to befriend some local residents and let them show you the city. Either way, you’ll do fine in Athens.

The charm of Athens is found in the hubbub of daily life on the streets. The city and residents exude energy and character. If you get off the tourist tracks, you’ll find little neighborhoods with outdoor cafes and no tourists. This is where the action is in true Athens. Just plop yourself down at a caf? and start people watching.

One particularly good spot is in the Plaka neighborhood. A nineteenth century quarter, Plaka has a mix of Turkish and Greek influences. From Plaka, you can head to the shopping bazaars found throughout the city. The bazaars in Athinas and Eolou are a bit touristy, but no excessively. With a mideastern feel, you can sit down and drink tea with local shop owners while they hock their wares.

From there, the city is wide open. If you dare, grab a taxi and tell the driver you just want to see the real city. It will be the ride of your life.

In the year of 1448, the birth of printing, movable type replaced hand-copied manuscripts. Johannes Gutenberg, the inventor of movable type, is known for his heavy blackletter typestyle. This typestyle was popular in Germany at the time. From there, printers were inspired to improve on this system. Gutenberg was a goldsmith from Mainz, Germany, and he was the first to carve the characters of the alphabet onto metal punches (which were driven into other pieces of metal called matrices). The movable type could fit into printing presses. This process was called letterpress printing.

The first book Gutenberg printed with his movable type was the Bible. The scribes would take years to a lifetime to hand-write them, and now Gutenberg was able to make them in a fraction of the time. His invention enabled everyone to be able to circulate information so much easier.

Just recently while antique shopping, I found an old drawer filled with wood and metal typography. The printer’s drawer (that now hangs on my wall) means so much to me?it made the history of movable type real to me. In light of studying about print and typography, I really appreciate what Gutenberg did for us. Written communication is all around us today; in fact, there is no end to what can be found. Books are so precious to us. John Milton said it best: ?A good book is the precious life-blood of a master spirit, embalmed and treasured up on purpose to a life beyond life.?

In order to enjoy healthier eating habits for life, it is important to make fundamental changes in the way you shop, cook and eat. A diet should be more than a temporary change in eating habits; a true dietary change must be one you can follow for a lifetime.
When doing the weekly grocery shopping, get into the habit of hitting the produce section first. Fill your shopping basket with fresh, in season fruits and vegetables, as they are rich sources of vitamins and minerals as well as fiber. Canned fruits and vegetables are good substitutes when the fresh varieties are out of season.
When choosing baked goods, always try to find those made with more nutritious and fiber rich whole wheat flour, wheat bran, oat bran, poppy seeds, sesame seeds, oatmeal or raisins.
Become a label reader. The federally mandated nutritional labels contain a wealth of valuable information for those who take the time to understand them. No matter what your reasons for increasing the amount of fiber in your diet, you may well find that this is one of the most positive dietary changes you ever make. Increasing fiber can have a significant impact on your future health and well being, and the change is easier to make than many people think.

Several years ago my wife worked with a very nice woman from Germany. The nice lady often brought homemade foods to work for lunch and often shared with everyone in the office. One day she brought a dish she called potato macaroni and it was so good everyone asked for the recipe. So, here it is for you to try:
Ingredients
2 large or 4 medium potatoes
1 package elbow macaroni
1 dash of salt
1 dash of pepper
1 onion
fresh chives cut in small pieces
1/2 package of swiss cheese or several slices
1 slice of mozzarella cheese (optional)
2 Tablespoons of butter or margarine
Sour cream (optional)
2 slices of bacon, turkey bacon or ham (optional)
Wash, Peel (optional) and cut up potatoes into small pieces. Bring potatoes to a boil over high heat.
Add a pinch of salt to the water. Boil potatoes for approximately 15 minutes. Add macaroni to water and continue to boil for about 8 to 10 minutes. In a separate skillet, Add butter or cooking oil and cook the onions until browned. Add the chives and continue to cook for a few minutes. Drain the potatoes and macaroni. Return the potatoes and macaroni to the pan. Stir in the chives, onions, swiss cheese, bacon and sour cream. Add salt and pepper to taste.
